High Pressure Processing (also called as High Pressure Pasteurization or High Pressure Pascalization) has been making an appearance in various industries including the juice industry and so much that, the juice industry is now spilt into two categories- those who HPP and those who don’t.
But what is it exactly?
We come across a lot of people asking us - ‘what is HPP?’
Scientifically, HPP is a cold pasteurization technique that involves subjecting food which is previously sealed and packaged, to a high level of pressure (in case of our juices ranging from 5000-6000 bar) for a few minutes to few seconds. To put this in perspective, this is 5 times the pressure at the deepest part of the ocean. The pressure disrupts the microbial biochemistry of bacteria.
Simply put, HPP prolongs the shelf life and makes the juice safe for consumption.
What difference does it make and why should you care?
HPP does not use thermal heating which in turn allows us to protect and pack in more natural flavours, colours, and nutrients in every bottle of our juice.
This technology applies water pressure that is five times of what is found at the deepest end of the ocean. The result? The pressure kills spores, moulds, yeasts and dangerous pathogens; thereby making it healthy for consumption. HPP is a natural ways to extend the life of chilled, clean label products.
Food and beverages that have gone through HPP can have their shelf life be extended by up to 10 times without heat, chemical preservatives, or irradiation.
